Vinification

The grapes are carefully selected and hand-harvested at optimal ripeness. Fermentation takes place in stainless steel tanks at controlled temperature (28°C) for approximately 15 days on the skins, with pump-overs twice daily to extract color, structure, and aromatic elegance. 30% of the wine is aged in wooden barrels, while the remaining portion matures in stainless steel, in order to preserve freshness and the integrity of the fruit

On the palate, it is balanced and harmonious, with refined, well-integrated tannins supported by fresh acidity that brings lift and drinkability. The finish is persistent, clean, and gently savory.

Pairs beautifully with a wide range of meats, from roast kid goat to veal or lamb chops. Also excellent with structured first courses such as risotto and agnolotti.
