Production features

Winemaking: Each Cru contains only Moscato’s vine. The grapes are harvested at different maturity stage, in different areas of our vineyard and are selected by Riccardo himself. As soon as possible after the grapes harvest, we perform a special pressing. The sparkling process takes place thanks to natural yeasts of our vineyard. We don’t use “liqueur de tirage” or “liqueur d’expédition”. The second fermentation takes place direclty in the bottle, with the same natural yeasts that we have used during the first fermentation. In this step, we don’t add sugar or “liqueur d’expédition”.

Organoleptic properties

The dry side of Moscato. A different profile of a grape that is commonly considered a soft wine. This is not an obligatory digression, though. The straw yellow colour with green nuances conveys a thick small bubble with hints of white pulp peach, peppermint and goiaba. The balsamic finish enhances the citrus aromatic flavour that makes this label extremely easy to match. Try it with sushi or with baccalà alla Romana (cod, Roman style).
